Blessing's Foods Coconut Brown Rice with Stewed Chicken Tenders

1 cup brown rice (parboiled)
1 can of Coconut milk
2 cups of water
4 tablespoons of vegetable oil
4 tablespoons of Blessing’s Foods Jollof Rice Seasoning Mix
4 medium size bullion cubes or Salt to taste
1 small chopped onion
4 small chopped Roma tomatoes
Half a pack of Chicken tenders
1/2 cup of frozen carrots, corn and green beans vegetables
2 tablespoon of curry power
1 tablespoon of dry basil flakes
How to prepare:
Coconut Brown Rice
Wash brown rice and add it along with the coconut milk, 1 1/2 cups of water, curry powder, mixed vegetables, 2 tbs of Blessing’s Foods seasoning mix, 2 bullion cubes (or salt), 2 tablespoons of vegetable oil into medium-sized pot. Bring to boil, lower to medium-low heat and allow to cook for about 25 mins or until water is absorbed. Remove from Heat, fluff and serve with Stewed Chicken Tenders. Enjoy!
Stewed Chicken tenders:
on medium-low heat, saute chopped onions in vegetable oil, add chopped tomatoes and let saute for about 3-4 mins. Add basil, curry powder, 2 tbs of Blessing’s Foods seasoning mix and 2 bullion cubes (or salt) and stir. Add chicken tenders and let cook for about 5-7 mins turning them over occasionally. Add 1/2 cup of water, stir and let simmer for another 10 minutes. remove from heat, serve with Coconut Brown Rice. Enjoy!
For more flavor, pan sear the chicken before adding to the stew. Garnish with fresh sliced tomatoes and parsley flakes!
